Fruits & Vegetables Week: Allium cepa var. aggregatum the Shallot: Allium cepa var. aggregatum (syn: A. ascalonicum) commonly used like onion The shallot tastes a bit like an onion, but has a sweeter, milder, yet richer and more complex flavour. Shallots tend to be more expensive than onions.
– Just to bring to your notice that all varieties except two of Allium cepa has been merged with the former [Goaverts et al. 2011 (Kew Checklist)] -That means Shallot is back as Al. ascalonicum L., a recognised name. –Allium ascalonicum L., Fl. Palaest.: 117 (1756) is not a synonym of Allium cepa var. aggregatum G.Don, Mem. Wern. Nat. Hist. Soc. 6: 27 (1827)- these two are different plants now known as Allium cepa and Allium ascalonicum. – Shallot is and was A. ascalonicum. Some times in between some one relegated it to synonymy of A. cepa var. aggregatum.
